Mini chocolate raspberry cheesecakes

Mmm cheesecake… one of my favorites. I had no idea how simple it is to make a good cheesecake until I found this recipe. I made no modifications to the cheesecake itself, but did make a graham cracker crust for the bottom instead of using vanilla wafers. In addition, Chef Greg topped them off with a chocolate raspberry sauce made from scratch. Melt semi-sweet chocolate chips, add some raspberry puree, and some liqueur… throw it in the fridge, and you’re good to go.
