Steak Tartare

This is one of Greg’s favorite recipes… and it’s insanely good. It’s a little scary serving raw meat and egg… so just make sure you buy your ingredients fresh (Whole Foods is a good bet). We like to serve this on rye bread or pita chips.

  • Finely dice half a pound of steak tenderloin or NY strip steak, removing all white fatty portions
  • Dice 3 tbps of shallot
  • Dice 1 tbsp capers
  • Finely chop 3 cornishons
  • Put all ingredients in a bowl, mix together
  • Add 1 tbsp Worcestershire sauce
  • Add 1.5 tbsp whole grain mustard
  • Add a few dashes of hot sauce
  • Squeeze of fresh lemon
  • Salt and pepper to taste
  • Add raw egg yolk (quail eggs are preferred if available)
  • Mix everything together and enjoy immediately!
